Blueberry Mufffins

I love to make these with Bobby. He can do most of the cooking with help. Now Bobby can't have eggs so we put in 1 med. size banana ( 1/4cup) instead of an egg.

Also if do weight watchers this is 4 points pre muffin.

1/2 cup light country crook margarine

1 cup sugar ( white)

 1/2 cup 2% milk

 1/2 tsp salt

 2 1/2 cups blueberries

 2 cups all purpose flour

2 eggs ( or 2 med size banana  1/2 cup or 1/2 cup tofu)

 2 tsp baking powder

 1 1/2 tsp vanilla

2 tsp white sugar to sprinkle on top

Pre geat oven to 375

Cream margarine and sugar. Add in eggs or banana and vanilla. Mix well.

Sift dry ingredients and add alternately milk.

Stir in blueberries by hand. Spoon into greased muffin cups, piling the mix high. Sprinkle with sugar.

Bake for 30 mins or until toothpick some out clean.

Hearty Beef Stew

This is an awesome dinner. My sister give me this recipe. If you are doing Weight Watchers this is 8 points pre 1 cup

1lb Beef stew meat, cut into 1-inch cubes

12oz. small red potatoes, quartered ( about 2 cups)

4 meduim carrots, cut into 1/2-inch pieces ( about 2 cups)

1 10 3/4 oz can condensed cream of celery soup

1/2 cup dry red win or beef  broth

1 envelope Mrs. Grass Onion Soup

1/2 tsp dried marjoram or thyme

Heat a large skillet over medium heat. Spray with cooking spry and cook beef until browned, Drain off the fat.

Place the potatoes, carrots, and beef in a 4-quart crock-pot. Stir together condensed soup, win or broth , onion soup and marjoram or thyme. Pour of the meat and don't stir. Every thing should be layered and that's fine.

Cook on low heat for 8-10 hrs or if you are like me and for got to get it in early, cook on high for 4-5 hrs.
